Here are some of the meals that the staff at The Cycling House will prepare for you on a daily basis. Be sure to let us know of any eating preferences or restrictions. We use wholesome, all-natural ingredients in our meals.

Breakfast

  • Whole Grain Fruit Pancakes – Whole Grain pancakes with sliced fresh fruit filling and toppings. Strawberry, apple, raspberry, blueberry, banana and granola
  • Yogurt and Granola – All natural yogurt with a choice of multiple different granola options.  Sweeten it up with some jam, honey or brown sugar
  • Spinach and Feta Scrambled Eggs
  • French Toast topped with fresh fruit – Add Jam or syrup for a longer training day.
  • Oat Meal with Sliced almonds topped with raisins and brown sugar.
  • Pasteries, bagels, toast,…
  • Cereal w/ milk or yogurt – Choose from a variety of different cereals including meusli, puffins, super nutty toffee clusters and many more.

Dinner & Lunch

  • Peanut Sauce Pasta (The Andy Special) – Angel Hair pasta topped with a sauce made of peanut butter, soy sauce, honey, and cayenne pepper.  Tossed with chicken, shredded carrots, toasted peanuts, and cilantro.
  • Greek Pasta with Shrimp – Orzo noodles tossed with sautéed shrimp and topped with a sauce of tomatoes, olive oil, capers, and feta cheese

  • Sesame Red Curry Chicken with Bok Choy and Sweet Coconut Rice, Chicken and Bok Choy cooked in slow cooker for 7 hours with a Red Sesame Curry Sauce laid over a bed of sweet coconut rice and garnished with cilantro.
  • Red-Wine Spaghetti with Broccoli Spaghetti noodles tossed with a homemade red-wine sauce and steamed broccoli and topped with parmigiano-reggiano cheese.
  • Spinach and Mushroom Burritos – Sautéed mushrooms and chicken in a chili powder lime sauce with wilted spinach laid inside grilled tortillas.
  • Mojito Chicken – Chicken breast cooked in a lime and rum sauce.  Served over a bed of couscous and topped with mint.
  • Grilled Halibut Tacos – Grilled halibut that has been marinated in a Mexican inspired marinade served inside a tortilla with shredded cabbage and fresh guacamole.
  • Barbeque Salmon – Grilled salmon with a barbeque and maple syrup glaze.
  • Grilled Mahi-Mahi Fillets – Mahi-Mahi marinated in a tamari and gingerroot sauce and seared over a hot grill.
  • Chicken Fajitas – Thinly sliced chicken marinated in vinegar, lime juice and cumin marinade, grilled along with red and green bell peppers and served in tortillas with salsa, onion, tomato, and avocado.
  • Veggie Pasta – Fresh spinach fettuccine tossed in a white wine sauce with sautéed asparagus, artichoke hearts, and wilted arugula.
  • Chicken Piccata – Penne rigate pasta tossed with chicken and a white wine and lemon sauce.  Topped with parsley and chives.
  • Pasta with Olive Oil, Garlic and Zucchini – Spaghetti tossed with sautéed garlic and zucchini with a basil oil sauce.
  • African Peanut Soup (Schultz Family Secret) – A chicken and rice soup with a tomato and peanut butter broth
  • Risi Bisi – Arborio rice slowly cooked in wine and chicken broth which results in a creamy, slightly chewy rice, tossed with small peas, parmesan cheese, and parsley.
  • Asparagus with Almonds – Baked asparagus seasoned with salt and freshly ground pepper and topped with toasted almonds.
  • Fresh Spinach Salad with Cumin Dressing – Spinach tossed with mandarins, red onion, and cashews with a red wine vinegar, orange juice, and cumin powder dressing.
  • Candied Salad – Spinach, romaine, and red-leaf lettuce tossed with candied almonds and a mustard poppy seed vinaigrette.

Also, The Cycling House locations have some amazing local, authentic restaurants. We usually get out at least once per campers stay.
